La Baguette de pain française inscrite au patrimoine immatériel de l’humanité par l’Unesco. L’organisation, qui honore avant tout les traditions à sauvegarder plus que les produits eux-mêmes, a distingué le savoir-faire artisanal. Audrey Azoulay, DG de l’Unesco “Unesco souligne qu’une pratique alimentaire peut constituer un patrimoine à part entière, qui nous aide à faire société”.
C’est une reconnaissance pour la communauté des artisans et j’ai voulu mettre en avant dans cette série le savoir-faire, qui peut très bien sortir des murs d’une boulangerie “classique”, d’une femme boulangère-pâtissière d’origine japonaise, Tomoe Sato, qui perpétue la tradition dans la tribu de Mouli dans l’ile d’Ouvéa en Nouvelle-Calédonie. Elle a restauré un four traditionnel, a appris des anciens le fonctionnement de celui-ci, son utilisation et son entretien. Elle doit en plus s’adapter à la météo qui est un facteur essentiel et encore plus lorsqu’on fait le pain dans la nature! La chaleur et l’humidité fait varier les pâtes pour un résultat changeant à la cuisson. La baguette c’est de la farine, de l’eau, du sel et de la levure, aussi simple que cela mais le savoir-faire de l’artisan c'est “la magie et la perfection” comme nous le dit le président Emmanuel Macron, qui a soutenu dès le début la candidature de la France pour cette consécration.

The French Baguette has been listed as an intangible heritage of humanity by Unesco. The organisation, which honours above all the traditions to be preserved more than the products themselves, has distinguished the savoir-faire artisanal. Audrey Azoulay, chief of Unesco "Unesco underlines that a food practice can constitute a heritage in its own right, which helps us to be a society".
It is a recognition for the community of artisans and I wanted to highlight in this series the savoir-faire, which can very well go outside the walls of a "classic" bakery, of a Japanese woman, baker, Tomoe Sato, who perpetuates the tradition in the Mouli tribe in the isle of Ouvea in New Caledonia. She has restored a traditional oven and learned from the elders how to use and maintain it. She must also adapt to the weather, which is an essential factor, especially when baking bread in the wild! The heat and the humidity make the dough very instable and may modify the result at the time of cooking. The baguette is: flour, water, salt and yeast, as simple as that but the savoir-faire of the artisan is "magic and perfection" as President Emmanuel Macron tells us, who has supported France's candidacy for this award from the beginning.
